Pumpkin Roll is my hands down favorite fall dessert. Once I learned how to make it from scratch, let’s just say from October to November you could always find a pumpkin roll in our house. Last night I made one and it is half way finished already!! There is no comparison making these yummy delights from scratch rather than buying them from the store. Below is the recipe (I got this from Libby) and I promise you will get hooked!

Ingredients

CAKE
  • 1/4 cup powdered sugar (to sprinkle on towel)
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1 cup granulated sugar
  • 2/3 cup LIBBY’S® 100% Pure Pumpkin
  • 1 cup walnuts, chopped (optional)
FILLING
  • 1 pkg. (8 oz.) cream cheese, at room temperature
  • 1 cup powdered sugar, sifted
  • 6 tablespoons butter or margarine, softened
  • 1 teaspoon vanilla extract
  • Powdered sugar (optional for decoration)

Directions

FOR CAKE:
PREHEAT
oven to 375° F. Grease 15 x 10-inchjelly-roll pan; line with wax paper. Grease and flour paper. Sprinkle a thin, cotton kitchen towel with powdered sugar.COMBINE flour, baking powder, baking soda, cinnamon, cloves and salt in small bowl. Beat eggs and granulated sugar in large mixer bowl until thick. Beat in pumpkin. Stir in flour mixture. Spread evenly into prepared pan. Sprinkle with nuts.

BAKE for 13 to 15 minutes or until top of cake springs back when touched. (If using a dark-colored pan, begin checking for doneness at 11 minutes.) Immediately loosen and turn cake onto prepared towel. Carefully peel off paper. Roll up cake and towel together, starting with narrow end. Cool on wire rack.

FOR FILLING:
BEAT
cream cheese, 1 cup powdered sugar, butter and vanilla extract in small mixer bowl until smooth. Carefully unroll cake. Spread cream cheese mixture over cake. Reroll cake. Wrap in plastic wrap and refrigerate at least one hour. Sprinkle with powdered sugar before serving, if desired.

COOKING TIP:Be sure to put enough powdered sugar on the towel when rolling up the cake so it will not stick.

A Simple Mason Jar DIY Fall Decoration!

Fall has become my favorite season and I cant’ hold back fall decorating any longer! Are you with me? This is a simple decoration I made from Mason Jars last year that are easy and inexpensive. Basically, I collected Chinese Chestnuts by my daughter’s school which are absolutely beautiful (You can also fill the mason jar with acorns too). I got some twine and wrapped it around a mason jar and added a simple button with hot glue along with sticking a decoration I got at Michaels for a $1 to place inside.. I used this decorations for a Teacher Appreciation dinner I had last year and they were a hit!

Fall Leaves In A Frame? Perfect!

I could stare at autumn leaves all day. I seriously can’t stop gazing at them, so I thought why not bring them indoors! One day after school Anya and I took a leisurely walk, talking and collecting leaves. Then we arranged the leaves into a rustic picture frame for a brand new autumn decoration for the house! It was simple, fun and didn’t cost a thing! This is a fun activity you can do with your kids that doesn’t take a lot of leg work.  All you have to do is collect some leaves and arrange them in a picture frame. Luckily, there is no shortage of leaves, so you  can have each of your kids create their own picture fram and display them in your house. You can also have everyone add their leaves to a large picture  frame and hang it up. I promise it will be a show stopper!  Bringing the indoors in is easy and pretty!

Easy Fall Flower Decor

Fall colors are so vibrant and beautiful aren’t they? It is so easy to utilize nature’s elements indoors. Here is an easy floral fall decoration I put together yesterday. The flowers are from Trader Joe’s only $3.99, the vase was from Ikea I think for about $1.99 and the chestnuts were picked up around the neighborhood at my daughter’s school and they were free! All I did was add some water to the vase, cut down the flowers, add the chestnuts around the base and tie some twine around the vase to add a little fall flavor. Aren’t they pretty? They added a sweet touch to my den, but I think they’d look great anywhere in the house.

Fall has arrived and so has the pumpkin craze! I’m obsessed with pumpkins so last year I tried my hand at making a pumpkin roll and it was delicious. It’s fairly simple and so yummy! I love pumpkin, seriously I am obsessed with anything pumpkins! Including real pumpkins, pumpkin lattes, pumpkin rolls, pumpkin cupcakes pumpkins…pumpkins…pumpkins!!! I guess that makes me a pumpkin head!! LOL! I look forward to Autumn all year mainly for pumpkins! So I decided to try to make one of my favorite desserts, a pumpkin roll! So I found this recipe from Libby’s that is out of this world! It isn’t the easiest thing on earth and I tried it twice. The first time I didn’t let it cool enough before I unrolled it and it cracked a bit but still delicious! However,  the second time I let it cool long enough and it is FABULOUS!!!
